Delicious Appleslaw Recipe

I am working on the lunch for my upcoming class...Saturday, October 18...on Menopause and I just had to share this delicious appleslaw recipe!

Toss Together:

1 small head of cabbage, shredded
1 – 2 carrots, shredded
2 Granny Smith apples, shredded
2 scallions (green onions), sliced thin
1 tablespoon apple cider vinegar

Blend then toss with mix of veggies (above):

1/3 cup sour cream
1⁄4 cup yogurt
1 – 2 tablespoons apple juice concentrate
2 tablespoons seeds (use poppy, sunflower, pumpkin, anything you can think of)

Chill it out in the fridge for a couple of hours, then chow down – delish!
